Peanut Brittle
(Make in a normal size microwave)
I found this recipe in the cookbook that came with my first microwave oven. So quick and easy to make!
Warning:
Do not make during high humidity weather. This mixture is very hot! The making
of this peanut brittle should be supervised by an adult.
1 cup white sugar
½ cup white corn syrup
Put together in 1-1/2 qt. casserole; stir well. Zap on high
for 4 minutes.
Add:
1 cup roasted, salted peanuts
Stir in. Very hot! Zap for another 3-5 minutes
(until light brown).
Add:
1 tsp. butter (no sub!)
1 tsp. pure vanilla extract
Add to peanut mixture; mix well. Very hot! Zap
for another 1-2 minutes. Peanuts should be light brown.
Add:
1 tsp. baking soda
Gently stir into hot mixture—this will foam and turn light. Very
hot! Quickly pour into a greased cookie sheet. Let cool on raised
baking rack for about one hour. When completely cooled, break into small
pieces. Store in airtight container.
Makes about 1 lb. of yummy brittle!
