Seasonal Pumpkin Pincushion Tutorial by Fiskars

Isn't this the cutest thing? I want to make a whole pumpkin patch of them!

Quilting Tip of the Week 10.8.15

When hand sewing down the binding of your quilt, I stop every 8" and make a small knot and "pop" it into the batting under the binding.

If the binding should come apart, there will only be a small area to mend.

Sweet Potato Quesadillas

This recipe is from

Serves 4

2 tbsp. vegetable oil
1 small onion, finely chopped (1 cup)
2 cloves garlic, minced (2 tsp.)
3 cups grated sweet potatoes
1 small jalapeno chile, chopped
2 tsp. ground cumin
½ tsp. dried oregano
1 cup fresh or frozen corn kernels
4-8 inch four tortillas

Heat oil in large skillet over medium heat. Add onion and garlic; season with salt (if desired). Cook, covered for 8 minutes. Add sweet potatoes, jalapeno, cumin and oregano; cover and cook 10 minutes, stirring often. Stir in corn and cook 1 minute or until heated through. Season with salt and pepper as needed.

Spread ½ cup filling on one half of each tortilla, leaving 1/2” border around the edges. Fold tortillas to enclose filling. (If a tortilla’s edges don’t stick together, brush some oil along the bottom inside edge).
Coat large skillet with cooking spray and heat over medium heat. Cook quesadillas in skillet 2 to 3 minutes, turning once. Serve with salsa and sour cream if desired.

Each serving is 355 calories, 8 g protein.

Pumpkin Pecan Cobbler Recipe by

This cobbler is a combination of lava cake and cobbler. The secret is not to stir the mixture!

Yield: 8 servings Prep Time: 10 minutes Cook Time: 40 minutes Total Time: 50 minutes

1 cup + 3 tablespoons all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup granulated sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/2 cup pumpkin puree
1/4 cup milk
1/4 cup melted butter or vegetable oil
1 1/2 teaspoons vanilla

1/2 cup granulated white sugar
1/2 cup brown sugar
1/4 cup chopped pecans
1 1/2 cups very hot water

Preheat oven to 350 degrees.

In a medium sized bowl, stir together flour, baking powder, salt, sugar and spices. Set aside.
In a smaller bowl, stir pumpkin, milk, melted butter and vanilla together to combine. Pour wet ingredients into dry ingredients and mix to create a thick batter. Pour into a small 8-inch casserole dish with high sides.

In a separate bowl, stir sugar, brown sugar and pecans together. Spread over the top of the batter evenly. Pour hot water over the entire thing (WITHOUT STIRRING A THING!) , place casserole dish on a baking sheet in case it bubbles over) and bake for 40 minutes or once the middle is set.

Cool 5-10 minutes before serving. Serve with ice cream.
